Now that your Thanksgiving meal is over, you may have a full refrigerator of leftovers (like I do!). Instead of making a gloppy casserole, I like to use the leftovers to make healthy meals like salads and soups. For example, topping a bed of salad greens with turkey and leftover vegetables becomes a gourmet salad, without having to heat up the oven again. Or put a pot on the stove using water or broth as a starting point, then throw in turkey, carrots, onions, celery–whatever veggies you have on hand–to make a savory soup. I also add a grains or legumes like lentils, beans or pasta to make a more substantial soup. Season with your favorite seasonings and/or garlic to taste. Of course, if there’s leftover dessert I’m happy to finish with that!
